How can I insert a valve in an immovable copper pipe?

If both ends of a copper pipe are fixed - soldered onto another fixed pipe, or fixed in masonry - is there a way to insert a shutoff value / tap? In one case the length of the 'target' pipe is several feet long, in another just 4". I am familiar with the details of using compression fittings and soldering. Thanks for any ideas.
